1 medium orange
1 fennel bulb (grated, ~2 cups)
1/2 cup veg oil
2 eggs
1/2 cup brown sugar
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
Zest orange. Peel and blend flesh in a blender until smooth. Combine orange mush and zest with fennel, oil, eggs and sugar, mix well, add dry ingredients. Bake at 350 ~ 25 mins.
