#192 eggplant linguini

1 medium eggplant (diced)
2 cloves garlic (minced)
1/2 onion (diced)
1 can diced tomatoes
1/2 lb linguini

Saute onion in olive oil 2-3 mins, add eggplant, garlic and tomatoes and simmer ~30 mins until eggplant dissolves and sauce thickens. Serve over cooked linguini
