#248 sun dried tomato sauce

~10 sun dried tomatoes
handful basil
1 container silken tofu

Reconstitute tomatoes in 1-2 tbsp boiling water until skins are soft ~5 mins. Add tomatoes, basil and tofu to blender and blend until smooth. Serve over pan-grilled bluefish and rice (or pasta)
